Warm evenings, long stretches of daylight, and the abundance of the farmers market makes me think about salads more this time of year. The overlap of spring's tender vegetables and the first wave of summer produce begs for simple meals built around what's freshest.
A favorite warm-weather hosting trick is to serve salad on a platter. It feels more celebratory, everyone can easily help themselves, and delicate greens stay crisp because they aren't compressed under the weight of heavier vegetables.
Simple Summer Salad Recipe
The salad featured in the above photo comes together in minutes and has a nice balance of sweetness, salt, and bright acidity. To make it, toss arugula with shaved radishes and snap peas cut on the diagonal, then dress with a mixture of fresh lemon juice, olive oil, date syrup, salt, pepper, and a bit of mustard. Finally, top it with chopped pistachios or almonds, crumbles of soft feta in brine, and chopped chives, plus an extra grind of black pepper.
